Whoopie Pie Cookies - 16 tablespoons (2 sticks, 226g) unsalted butter, at room tempature - 1 cup (213g) brown sugar, packed - 1 1/2 teaspoons salt - 1 1/2 teaspoons allspice - 2 teaspoons ginger - 1 teaspoon cloves - 2 teaspoons cinnamon - 1 cups (336g) molasses - 1 large egg 5 1/2 cups (660g) unbleached all-purpose flour - 1 1/2 teaspoons baking soda in 1/4 cup (57g) water Spiced Cream Cheese Filling - 6 ounces (170g) full-fat brick cream cheese, softened to room temperature - 1/4 cup (4 Tbsp; 56g) unsalted butter, softened to room temperature - 1 and 1/2 cups (180g) confectioners’ sugar, sifted - 1/2 teaspoon pure vanilla extract - small pinch of each: ground ginger, ground cinnamon, ground nutmeg, ground cloves
